In 2022, Mendocino's Redwood Valley received sufficient rain during the winter, allowing the groundwater to recover. The mild and cool spring weather provided ideal conditions until early summer. Although the intense heat hit before the grapes were fully ripened, our fields were able to maintain milder temperatures and store vibrant vitality in the grapes.
The harvest began on September 3rd and was completed before the heatwave that hit around Labor Day. The healthy old vines produced grapes of excellent quality. We focused on Mendocino County's diverse soils and ideal climate, which fit our vision of creating lively, mineral-driven white wines inspired by our history and the great wines of the Loire. We then sought out small, family-owned, old vineyards that survive in close contact with nature and organic farming. The love and wisdom of these family growers is an essential element of the terroir. It is expressed in the character, complexity and expression of the land expressed in Centium. The grapes are hand-picked and carefully pressed. To highlight the individual nuances of each parcel of the vineyard, fermentation is carried out in small lots, in equal proportions in small containers: concrete, used French oak barrels and stainless steel tanks. The wine is aged on the lees for 9 months, during which it is stirred regularly.
Sentium was racked once before bottling and bottled on June 16, 2023. This is the first Sauvignon Blanc made by Tim Mondavi's daughter Chiara as a winemaker. In the 1960s, her grandfather Robert Mondavi released a dry French-style Sauvignon Blanc called FuméBlanc, which differentiated it from the sweet Sauvignon Blanc that was made at the time, and it has since become a standard wine in California. This wine was inspired by such a great grandfather and is Sentium. Chiara, who drew the label for Continuum, became the expression of "Sentium" (meaning feeling, sensation) with the artistic soul of Continuum and the spirit of honoring the legendary FuméBlanc made by her grandfather.
