COMMENT
A new brand launched by Ernest Vineyards.
The Greek word "Edaphos" means earth, soil, or ground, and we chose it as the brand name because we felt it best represents the approach to winemaking at Edaphos, as Edaphos wines are a product of their place.
We focus on California's unique varieties and produce only small quantities based on the concept of "single variety, single vineyard."
WINEMAKING
Picpoul from Prier Vineyards in Lodi. This is a vineyard with sandy soil that does not use synthetic substances. To maintain natural acidity, the grapes were harvested when the skins were just beginning to soften. After pressing, the wine was racked and fermented at low temperature in stainless steel tanks. No SO2 was used during this process. The wine was filtered to prevent malolactic fermentation, and after aging for 3 months, it was bottled with only a small amount of SO2 added. Yield: 225cs.
