For a long time, the Pedroncelli family has passed down through generations the tradition of selecting varieties suited to the land and soil, cultivating the soil, growing grapes, and making wine.
Wisdom is the knowledge accumulated through experience by an expert with a keen eye who turns grapes into wine and bottles it.
Vintage Information
The beginning of 2019 was rainy, allowing the soil to retain sufficient water. A cool summer and autumn followed, with warm days and cool nights, and a large diurnal range, which allowed for a long growing season and allowed the grapes to develop rich aromas and flavors. The weather during harvest was also ideal.
Technical information
Brewing and aging: After destemming and cold soaking for 48 hours, the wine was fermented using Bordeaux yeast in small stainless steel tanks, which allow the skins and juice to come into contact with each other during fermentation, and pumped over daily to extract color, tannins, and flavor. After fermentation, the wine was aged for 19 months in French barrels (40% new), resulting in a mellow, complex wine. After bottling, the wine was aged in bottle for 16 months before being released.
Tasting Comments
Deep red-purple in color. A rich, full-bodied Cabernet Sauvignon with aromas of blackberry, baking spice, and mocha. The taste of ripe dark berries is accompanied by hints of dry herbs and oak, as well as minerality. The carefully woven mellow tannins, moderate acidity, and oak-derived spices linger for a long time. This wine has the complexity and depth of a reserve style, and is delicious to drink now, but it can also be enjoyed aged for more than five years from the vintage.
Field information
The winery's vineyards, located three kilometres west of the winery in the western hills of Dry Creek Valley on Dry Creek Road, were purchased in the 1960s.
The Cabernet Sauvignon vines planted in 1965 have been replanted in recent years, but some old vines remain.
Malbec trees were planted during replanting.
This wine is made from that plot.
The sunshine and temperatures are just right for Cabernet Sauvignon to ripen fully, the rocky loam soil allows the roots to grow deep underground, and nightly fog during the hot summers cools the grapes, producing fruit with an excellent balance of acidity and sugar content.
