Aged for 14 months in French barrels (30% new). Rich aromas of plum, sage and toasted oak, ripe cherry, black olive and reduced blackberry jam. The spiciness of the pepper lingers on the palate.
Vintage Information
The 2020 vintage saw rain in the spring and a hot August with little to no heatwave in September.
The Cabernet Sauvignon grapes were harvested in late September based on ripeness and acidity levels.
Technical information
Brewing and aging: The grapes are destemmed, Bordeaux yeast is added, and the grapes are cold soaked for 48 hours before fermenting in stainless steel tanks.
Pumping over once a day ensured that the flavour, tannins and colour were extracted to the optimum extent.
Tasting Comments
A medium-bodied Cabernet Sauvignon with aromas of blackcurrant, spicy oak and mocha.
Fruity flavours of cherry, black plum and blackberry with soft tannins.
Hints of dried herbs and dark chocolate are added.
It has a solid structure and moderate acidity, with a hint of spice and a pleasant toasty finish.
You can also enjoy letting it age for 10 years after the vintage.
Field Information
Some of the Cabernet Sauvignon comes from our own vineyards at the northern end of Dry Creek Valley, while the other Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot and Malbec come from vineyards nearby the winery.
These vineyards are located on the flat land in the middle of the valley, and the ample sunshine and cooling fog ensure that the grapes are of high quality.
