Vintage Information
In 2020, there was moderate rainfall in the spring, good weather in the summer, and a slight heat wave in September.
The Cabernet Sauvignon in Block 007 was harvested at the end of September to check for optimal levels of fruit ripeness and acidity, producing grapes with aromatic, gentle tannins.
Technical information
Brewing and aging: The juice and fruit are cold soaked for 48 hours and then fermented in small, temperature-controlled stainless steel tanks, optimizing the skin to juice ratio and resulting in better flavor and a deep, beautiful color.

Tasting Comments
Attractive aromas of charred oak, dried herbs and black fruits.
Smooth tannins enhance the blackberry flavor, along with hints of cedar and mocha.
The finish is firmed by a mineral feel and pleasant acidity, making it very elegant, and the mellow tannins and solid structure suggest the wine has the potential for long-term aging.

Block 007:
In Pedroncelli, blocks are assigned numbers when they are first planted.
Dry Creek Ranch is a 42-hectare estate located on benchland on the east bank of Dry Creek Valley, 1.6 km west of the winery, with 7 hectares of the estate planted to Cabernet Sauvignon.
The first Cabernet was planted in Dry Creek Valley around 1965. Block 007 was trained to Scott Henry in 1992 to allow for better sun exposure for the grape clusters.
This method of training allows the fruit to ripen in an even manner.
The soil is well-drained, adjacent to Canyon Creek, and gravelly, making it ideal for growing Cabernet Sauvignon.
Since then, vineyard manager Lance Blakely (husband of Jim's daughter Lisa) has been in charge of careful cultivation management.
Block 007 is a wine that is only produced in good years.
*The wine's name, 007, has no relation to the special agent who appears in the world-famous British spy films.
The name was chosen as a combination of the name of the field block and clone 7.
