The warm, dry winter of 2020 was followed by a warm spring, which led to smooth flowering and fruit set. The summer saw alternating cool mornings and warm days, allowing the grapes to ripen slowly while retaining their acidity.
There were concerns about smoke damage from the wildfires, but the best grapes were carefully selected to produce a high-quality wine.
The wine contains absolutely no grapes due to concerns about smoke damage, allowing the healthy, vibrant fruit to stand out.
Technical information
Winemaking: The grapes are gently crushed and then soaked for 48 hours in cold storage to slowly develop the aromas and colour before the main fermentation begins.
After the main fermentation is complete, the wine is gently pressed and aged for 12 months in France (approximately 95% new oak barrels).
