From three vineyards on the Sonoma Coast slopes. Fermented in stainless steel tanks for gentle extraction. Aged for 18 months in French barrels (used for several years). Overflowing from the glass are nuances of cassis, dark chocolate, and black berries, with firm tannins that are not too bitter, and bright, youthful acidity that expresses the characteristics of a cool-climate red wine. Goes well with semi-hard cheeses, spiced lamb, stewed meat dishes, and pasta with ragu sauce.
Food Pairing: Pairing suggestions from Viviana
Cheese: semi-hard, somewhat matured cheddar cheese, matured gouda cheese, cheese with added flavors such as truffle.
Meat: Grilled or smoked pork, beef and lamb with Mediterranean spices.
Pasta: Pasta with a hearty red sauce, braised meat and freshly grated Parmesan.
Technical information
The ratio varies depending on the vintage, but Syrah dominates. In 2019, the grape varieties were 64% Syrah, 14% Merlot, and 22% Cabernet Sauvignon.
Harvest: The grapes are harvested from the vineyards in the evenings in October and brought immediately to the winery for sorting.
Winemaking: Place in a covered stainless steel tank and infuse at low temperature for several hours to allow the elements from the skins to penetrate the flesh, then begin fermentation. Pump over (circulate the liquid) 2-3 times a day to ensure gentle extraction. Be careful not to let the fermentation temperature exceed 29.5°C. The free-run juice and remaining grapes are gently pressed.
