The wines are a blend of two plots, one adjacent to the 1er Cru in the north of the appellation and the other in the south. The vines are 30 to 40 years old. Michel Coutoux is the son-in-law of Michel Niyon, a top producer in Chassagne-Montrachet. Coutoux was born in 1969 to a family of winegrowers in Touraine, and graduated from agricultural school in Beaune in 1987. He then worked as a stager at Guy Amiot for two years and at Bernard Morey for six months. During that time, he met Niyon's second daughter, and married her in 1991. He currently manages and operates Domaine Michel Niyon, from the fields to the winery, together with his father-in-law, who has announced his retirement. Thanks to his work at this prestigious domaine, he got to know the winegrowers in the neighborhood, and using those connections, he established this micro-négociant specializing in white wines in the Cote de Beaune. "In my work as a négociant, I don't go into the fields myself, but I know very well who is doing a good job in each field. I know all the producers in Chassagne-Montrachet in particular," he asserts. By signing long-term contracts with these excellent grape growers, we are able to purchase grapes of the highest quality consistently. Fermentation and aging are carried out in our own cellars. A powerful and concentrated wine. 1997 was the first vintage. Annual production is only about 20 barrels.
