DINING
It goes well with grilled fish, such as roasted sea bass with lots of fennel, or jellied fish and shellfish. Serve at 11-13°C.
TASTING
The aroma of white flowers and yellow fruits such as apricots spreads pleasantly. The mouth is full-bodied and complex, with a long aftertaste reminiscent of hazelnuts.
COMMENT
This is a long-established maison in Sancerre, a famous wine-producing region in the Loire region, which has been in business since 1850. The maison owns many vineyards with "silex" soil, where the best wines in Sancerre are made, and produces wines that can be aged for a long time, with an emphasis on terroir. The owner, Henri Bourgeois, is a great Japanophile and has visited Japan more than 60 times.
"Sancer Blanc La Comtesse" is made from grapes grown on the hill of "Mont d'Année", which represents Sancerre. This hill has the same Kimmeridgian soil as the famous Chablis vineyards, and is a steep south-facing slope. This is a very aromatic and gorgeous Sancerre.
WINEMAKING
Hand-picked, then débourbage at low temperature. Fermented in stainless steel tanks at 18-20°C. No malolactic fermentation. Aged until May of the following year.
