Sweet. Honey-preserved aromas of pear and quince. Well-balanced and soft on the palate. Acidity underpins the aftertaste. Delicious when young or aged for over 10 years. Goes well with foie gras, blue cheese (Roquefort, Fourme d'Ambert) and various sweets. Granite soils in Chavanay. Plant density: 8,000-10,000 vines/ha. Weeds are left to prevent soil erosion. No pesticides are used to respect the soil and vine environment. Natural organic matter is used only when the weather changes or when spraying is necessary. Grapes are allowed to mature while regulating vigor and yield, removing leaves and green harvesting. Thinning is done in spring. Harvested and vinified in individual plots. After harvest, grapes with gray mold and dry raisins are removed. After pressing, the must is left to rest for a while. In a temperature-controlled cellar, alcoholic fermentation begins in wooden barrels with natural yeasts. Fermentation takes a very long time during the winter. Aging takes 8 months in wooden barrels. Alcohol content is 12%. Residual sugar is 90g. Born in 1961, Mr. Cuillon studied oenology and viticulture at a technical school, and then took over his uncle's domaine in 1986. Since his mid-30s, he has already reached the top level as a white wine producer in the Rhone region, and especially owns a large 12ha vineyard in Condrieu, where he produces outstanding wines with complex, rich, well-balanced and deep flavors. The Vieilles Vignes made from old vines and the Récolte Tartives made from perfectly ripe grapes picked later are spectacular. The vines are 15 to 60 years old, and the grapes are selected and harvested while keeping the amount to a minimum, and then carefully selected again on the selection table. For reds, up to 30% of the grapes are fermented whole in cement and stainless steel tanks, which allow for easy temperature control. For whites, the wines are generally fermented in barrels. After a long maceration period, the wines are aged in small barrels (10-100% new barrels) for 6-18 months. The wines are frequently batonnaged and bottled without filtering. Currently, the Domaine owns 75 hectares and is the largest in the Northern Rhone region. In 2016, the Domaine opened a new winery and adopted gravity flow, striving to produce even more outstanding wines.
