Fermentation with remontage and pizage (5 times or less). 15 months of wood barrel aging. Meyer-Fonnais is a domaine located in Katzenthal, Haut-Rhin, about 7km northwest of Colmar. The Meyer family immigrated to this area from Switzerland in 1732, and the domaine was founded by Felix Meyer, born in 1877, who established a grape growing farm. Initially, they sold grapes to a cooperative, and began bottling their own wine in the 1960s when François, the father of the current owner, joined the domaine. The current owner is the fifth generation, Felix Meillet, who shares the same name as the founder. The Domaine has grown rapidly since Felix took over in 1992. Felix obtained his BTS (Higher Technician's Diploma) at the winemaking school in Maconnais, and after graduating, he trained under famous top producers such as Zind Umbrecht, Domaine Dujac, and Comte Lafon, and established his own wine philosophy. Felix's wines are a style that combines lightness and strength with the purity of the liquid while respecting the individuality of the grape varieties. He believes in making wines that can be enjoyed early after bottling, but at the same time, that develop complexity and depth as they age. In order to give the wine complexity and potential and express the terroir, the wines are aged on the lees, which is very rare in the Alsace region. All wines are made using natural yeast and slowly pressed with a balloon press. The Domaine's headquarters in Katzenthal includes 18.8 hectares of vineyards, including six Grand Cru vineyards. The Domaine owns Meyer-Fonnet's pride and joy, the Grand Cru "Winec-Schlossberg", as well as "Schoenenbourg", which is considered the finest cuvée by top Domaines such as Marcel Deiss, Botto Geyr and Trapet. Currently awarded two stars by Meilleur Vins de France, the Domaine is highly praised by wine magazines as a "young rising star", making it the most notable young winemaker in Alsace.
