Barrel aging is done in 20-35% new barrels, and immediately after aging, the racking is done to remove large sediments, and the sediments are returned and aged for 16-20 months. This domaine was founded in 1925 by Marcel Noellat, the grandfather of the current owner, Ms. Ghislaine Barthes. In 1950, Noellat's daughter, Ms. Madeleine Elena (Ms. Ghislaine's mother), married Mr. Gaston Barthes (her father), and the domaine developed further. Ms. Ghislaine studied tourism at the University of Dijon and returned to her parents' home in 1980. After studying viticulture and brewing at the agricultural school in Beaune, she began winemaking under her father, Mr. Gaston, in 1986. Since 1999, she has been cultivating and brewing completely on her own. The field is 6.5 hectares. Fully ripe grapes are carefully harvested with low yields, and fermented slowly and carefully in the most organized and clean winery and cellar. The grapes are pressed with destemming. The wine is aged in 20-35% new oak barrels, and immediately after aging, it is racked to remove the larger sediments, and then the sediments are returned for 16-20 months of aging. The wine has an optimal concentration, a solid structure, and a perfect balance, making it a full-bodied wine. This is one of the leading domaines in Chambolle, and its wines are served in three-star restaurants throughout France. G. Barthes' eldest son, Clément, born to his common-law husband Louis Boillot, has also joined the domaine, marking the start of a new chapter in the history of the Domaine.
