The fully ripe grapes are carefully harvested with low yields, and fermented slowly and carefully in the cleanest and most organized winery and cellar. The grapes are pressed with destemming. The barrels are aged in 20-35% new barrels, and the wine is racked immediately after aging to remove the large sediments, then the sediments are returned and aged for 16-20 months. The Domaine was founded in 1925 by Marcel Noellat, the grandfather of the current owner, Ghislaine Barthes. In 1950, Noellat's daughter, Madeleine Elena (Ghislaine's mother), married Gaston Barthes (her father), and the Domaine developed further. Ghislaine studied tourism at the University of Dijon and returned to her parents' home in 1980. After studying cultivation and brewing at the agricultural school in Beaune, she began making wine under her father, Gaston, in 1986. Since 1999, he has been cultivating and brewing completely by himself. The vineyard is 6.5ha.
