The current owner is Alexis Jannot. The 14.2ha of land he owns is made up of 70% silex-covered soil, 25% Kimmeridgian soil, and 5% limestone, and he says, "Compared to other producers in Pouilly-Fumé, the proportion of silex is higher." The silex is newer in terms of soil composition, and since silex is deposited on top of the Kimmeridgian soil, the Kimmeridgian is exposed, especially on slopes. Some of the vines are over 80 years old, giving the flavor a greater depth. The harvested grapes are soft-pressed after selection, and fermented and aged in stainless steel tanks. Each fermentation is done according to the characteristics of the field, and then the flavor is adjusted by assemblage. Malolactic fermentation is not performed. Jannot, the owner of the family, says, "In winemaking, I believe in the 3Fs: Fresh, Fruity, and Faithful."
