The 20-acre Dolce Vineyard is located in Coombsville, east of Napa City, at the foot of the Vacca Mountains, which form the eastern border of the Valley. The volcanic soil is soft and very well drained, and the west-facing vineyards are protected from the winds of the Valley, resulting in moisture and morning fog that accumulates around the vines until noon, which is very important for Botrytis cinerea to grow. This high humidity and subsequent drying encourages the growth of Botrytis, but there is no guarantee. If the fungus spreads, its coverage is random and varies from berry to berry. Dolce, a sister winery of Far Niente, is the only winery in North America that produces late-harvest wines and a single wine. "Dolce" comes from the Italian phrase "Dolce Far Niente" - "Sweet to do nothing". This type of winery is rare in the world, and shares the same philosophy as Bordeaux's Sauternes producers. Because the winemaking relies solely on natural noble rot, production volumes vary considerably, but the winery has produced wine every year since 1989 and is known as the "golden drops of Napa Valley."
