A well-balanced nose reminiscent of white peach. There is also a subtle hint of oak. In the mouth, a characteristic iodine flavor is felt, highlighting the depth and elegance of the flavor. It can be aged for 8 to 10 years. In order to protect this historic plot and considering the very high age of the vines, Merlan takes a very strict approach.

Organically grown, no chemical herbicides used, hand harvested, the wines are made by Olivier Merlin and Dominique Lafon at the Merlin winery in La Roche-Vineuse. They are directly pressed and then aged. Light débourbage in stainless steel tanks. Alcoholic fermentation and MLF in oak barrels. Elevage in wooden barrels for 18 months, racking, light filtration, and bottling. No fining.

Free sulfur dioxide: 25 mg/LThis is a new domaine jointly established by Olivier Meurlan, a leading figure in the Maconnais region, and Dominique Lafon, owner of Domaine Comte Lafon, a top domaine in Meursault and the great dry white wine maker in Burgundy. The Clos des Cars vineyard, located in the southernmost part of Pouilly-Fuissé, is a historic vineyard that dates back more than 100 years, and as soon as Meurlan and Dominique stepped into the vineyard, they immediately felt the potential and greatness of this vineyard. Overlooking the Saône River, this 100-year-old vineyard is a monopoly surrounded by a long, high stone wall (Clos). The 2.23ha vineyard has the oldest vines, planted in 1917. They decided to bring their experience and know-how together to create a wine that would surpass any Pouilly-Fuissé ever produced. [About the establishment of Premier Cru in Pouilly-Fuisse]

In 2020, INAO established Premier Cru for the first time in Pouilly-Fuissé. Of the total 800 hectares of Pouilly-Fuissé, 22 climats covering 90 hectares have been approved. The cuvees from four vineyards, Soeur la Roche and Clos de France in the Vergisson area in the north, and Clos des Carles and Chevrières in the Chantres area in the south, have been promoted to Premier Cru.
