It combines California tradition with the finest Old World Bordeaux characteristics.

Tasting notes: On the palate, the berry fruit flavors start with cherry, then change to concentrated black currant flavors.

Fragrant aromas of anise and dried herbs bring out the typical Cabernet character, giving the wine depth and leading to a tightly focused finish.

Medium bodied and elegant in taste.

The complexity of the French oak is well integrated, with fine-grained, firm tannins.

California's North and Central Coasts are ideal for growing rich, flavorful and varietally expressive Cabernet Sauvignon.

Daily fog from the Pacific Ocean and San Francisco Bay keeps temperatures and vine growth in check, allowing the fruit to ripen steadily, maximizing flavor and color.

Paying homage to Cabernet Sauvignon's roots in Bordeaux, France, we focused on the Mendocino and Monterey regions to capture the interplay of fruit and earthy flavors that characterize Cabernet Sauvignon.

Our grapes are picked at dawn while it's still cool and transported to the winery.

There, the grapes are destemmed and partially crushed to extract the juice.

We keep the whole grain content at around 35% for complex textures and flavors.

We use cultured yeast to ensure healthy and complete fermentation and to preserve and maximize the pure expression of the variety.

Cabernet's tough skins require punching down or pumping over at least twice a day during the height of fermentation to extract the desired compounds from the skins.

High fermentation temperatures, including a short, controlled high temperature mid-fermentation, enhance the wine's mouthfeel and depth.

In addition, some lots undergo extended maceration of 1-2 weeks after fermentation to help the tannins become more refined and integrated into the wine.

Further aging at various toast levels and in the barrel maker's French oak creates layers in the wine that provide the backbone for the blend.
