Bright red with a bluish tint. Powerful and complex aromas of spices, timut pepper, sandalwood, ambergris, etc. Hints of black cherry, violet, and freshly baked brioche are also felt. The mouthfeel is smooth, and the delicate yet firm tannins give it a long finish. It also has a pleasant bitterness that stimulates the appetite. The grapes are harvested by hand, sorted, and 70% are fermented whole bunches. Alcoholic fermentation takes 15 days, during which 5 to 7 foot pichages and remontage are performed. After pressing, the solids are allowed to settle for 2 weeks, and then transferred to wooden barrels. 30% new barrels and 70% used barrels (1 to 5 years) are used for aging. After 13 months, the wine is transferred to tanks and allowed to settle for 3 months before being bottled without clarification or filtration. Les Terres de Filendre is a négociant brand made by David Dubin, one of the best winemakers in Burgundy, with the same philosophy and quality as his own domaine, using 100% purchased grapes. David Dubin created a separate brand to challenge terroirs other than his home base, the Côte de Nuits. The name Filendre comes from two little angels, Philomène and Léandre, who were born on December 16, 2010. David Dubin purchases grapes that meet his strict requirements, and he buys only those that he is satisfied with after observing the work of the growers. There is no special contract with the growers, and they maintain a relationship of trust, allowing them to continuously purchase grapes of excellent quality. They are not involved in the field work, but they do the harvesting themselves at the best timing. The grapes are grown organically and using the lutte raisonnée method. He started purchasing grapes from Savigny-les-Beaune from the 2019 vintage, and is currently considering purchasing grapes from new areas if he can get the quality he desires. This is the first time he has imported grapes from the 2020 vintage into Japan.
