Violet-hued Carman Rouge. Aromas of blue fruits, concentrated tomatoes, blackcurrants, goji berries and strawberry cream. Hints of ash, ink, hay and patchouli, sawdust, truffles and cream. The crisp acidity is in perfect harmony with the powerful and rich aromas. The tannins are supple, giving the wine a long and pleasant finish. Average age of vines: 55 years, facing east, clay-limestone soil. 60% whole-cluster fermentation. 15 days of fermentation (punchdown with feet and remontage), 13 months of barrel aging (30% new barrels, 70% barrels used for 1 to 5 years), 3 months of tank aging, then bottled. Unfiltered, unfined. Les Terres de Filléandre is a négociant brand made by David Duban, one of the best winemakers in Burgundy, with the same philosophy and quality as his own domaine, using 100% purchased grapes. In order to challenge terroirs other than the Côte de Nuits, David Duban's home base, he decided to establish a separate brand. The name Philomène comes from the two little angels born on December 16, 2010, Philomène and Léandre. David Duban purchases grapes that meet his strict requirements, and he buys only those that he is satisfied with after observing the work of the growers. There are no special contracts with the growers, and he maintains a trusting relationship with them, and is able to continuously purchase grapes of excellent quality. Although he is not involved in field work, he harvests himself at the optimal time. The grapes are grown organically and are lutte raisonnée. He started purchasing Savigny-les-Beaune from the 2019 vintage, and is still considering purchasing new areas if he can get grapes of the quality he is looking for. This is the first time that grapes from the 2020 vintage will be available in Japan.
