The vibrant salmon color is eye-catching. Aromas of fresh plum, red currant, baking spices, and cherry pie. The taste starts with a lively and clean acidity, followed by the delicate and rich fruitiness of Pinot Noir, giving it a soft mouthfeel. It then lingers on for a long time. It can be enjoyed on its own or with almost any item from the beginning to the end of a course meal. In 2020, wildfires occurred in August, so we hurriedly harvested the grapes in an effort to save as many as possible before they were affected by the smoke. Since it was harvested much earlier than usual, the sugar content was 16.5 Brix, which was too low to make into red wine, so we produced it as sparkling wine. Although it was born out of this desperate measure, it was sold only to local wine club members, and was so well received that we decided to sell it in Japan as well. Yuki Estate is a winery located in West Sonoma Coast, a region that has been gaining attention in California and was newly certified as an AVA in May 2022. The cool vineyard is located at an altitude of 300m, surrounded by virgin redwood forests in the Occidental region, about 8km inland from the Pacific Ocean. Since the first vintage in 2014, the winery has been producing wines that express the characteristics of this land. With the cooperation of Craig Romer, former winemaker at Schramsberg in Napa Valley, we took a minimalist approach to brewing, as with the Blanc de Blancs, to fully express the characteristics of the vineyard and Freeman's elegant house style. The primary fermentation with the lees further enriches the fruitiness that is characteristic of Yuki's vineyards, and the use of old French oak barrels enhances the structure and aroma of the wine, and the unfiltered wine gives it a natural transparency without stripping away the body. Further bottle aging further enhances the characteristics of the yeast aroma. Dosage is 1g/L. Freeman Vineyards & Winery was founded in 2001 by Ken Freeman and his wife Akiko, who is from Roppongi. 15 years ago, when the two had just met, they hit it off as both lovers of elegant and sophisticated Chardonnay and Pinot Noir, and dreamed of one day making wine in California with the complex flavor and power to attract drinkers like Burgundy. In order to establish a winery that could rival the world, they began to inspect over 300 vineyards and growers, focusing on vineyards planted on cool, gentle slopes. As a result, they chose the Sonoma Valley production area, which is covered in fog and influenced by the cold sea breezes that blow inland from the coast. The grapes grown there ripen slowly, retaining fresh acidity, and growing very pure and rich in flavor. When Freeman was founded in the 2000s, California was in the midst of a boom in the production and consumption of fruit-rich wines, but they were not influenced by such trends and stuck to their belief of brewing balanced and elegant wines based on organic farming. As a result, Freeman's wine style has attracted attention not only in California but also around the world, and has been adopted by famous restaurants around the world, growing into a small but well-known brand. In April 2015, the 2013 vintage of Ryofu Chardonnay was served at the White House official dinner hosted by former President Barack Obama, who invited Prime Minister Shinzo Abe, and it suddenly became a spotlight. As of 2019, Akiko is the only Japanese female winemaker who owns a winery and vineyards in California, and continues to produce modest, sharp, high-quality wines.
