The color is pale green-yellow, and the lively aroma of lemon and grapefruit spreads. The wine has a fresh fruitiness with white flowers, herbs, and a slight saltiness, and a clean, cored acidity that gives the wine a three-dimensional feel. Folium Vineyard was founded in June 2010 in Brancott Valley, Marlborough, in the northeastern part of New Zealand's South Island. At Folium Vineyard, we grow Sauvignon Blanc and Pinot Noir with great care, and our goal is to produce the highest quality wine. The soil of the vineyard is a mixture of clay brought by the movement of glaciers during the ice age and gravel carried by the flooding of the Wairau River. The high clay content allows the grapes to retain the moisture they need to grow even in dry summers. By planting more vines than other vineyards in Marlborough, we are able to produce more concentrated, powerful fruit. In order to maintain New Zealand's clean environment, they follow the rules of the organic farming certification organization "Biogro" (certified in 2014). "The fastest way to make high-quality wine is to grow high-quality grapes," says Mr. Okada, the grower and winemaker. They strictly limit yields in the fields, manage the canopy by removing leaves, and in the fall, they hand-pick all the fully ripe fruit. To make the most of the characteristics of the harvested grapes, they keep human involvement in winemaking to a minimum and produce wines that reflect the terroir of Folium Vineyard.
