The vineyards are located in the heart of the appellation, on terraced fields in the village of Chavanay, and are mainly exposed to the south and southeast.
The violet-like aroma derived from the muscovite granite is impressive. The planting density is high at 8,000 to 10,000 plants per hectare.
Treatments are kept to a minimum depending on the weather.
To preserve biodiversity, only organic fertilizers are used, and pesticides and fertilizers are rarely used. The vines are controlled for vigor and yield, and leaves are thinned out and green harvested to promote ideal grape ripening. Buds are removed in spring. Harvesting is done by hand, and winemaking is done by plot, following traditional methods.
We use naturally derived ingredients whenever possible, such as yeast.
After the MLF, 50% of the wine is aged in 3,000L foudres and the rest in wooden barrels from Burgundy for 8 months. No racking is done during this time. The several plots are blended before bottling. Born in 1961, Mr. Cuillon studied winemaking and viticulture at a technical school, and then took over his uncle's domaine in 1986. He has already reached the top level of white wine producers in the Rhone region since his mid-30s, and in particular owns a large 12-hectare vineyard in Condrieu, where he produces outstanding wines with complex, rich, well-balanced and deep flavors. The Vieilles Vignes made from old vines and the Récolte Tartives made from perfectly ripe grapes picked later are spectacular. The vines are 15 to 60 years old, and the grapes are selected and harvested in small quantities, and then carefully selected again on the selection table. For reds, up to 30% of the grapes are fermented whole in cement and stainless steel tanks, which allow for easy temperature control. For whites, the wines are generally fermented in barrels. After a long maceration period, the wines are aged in small barrels (10-100% new barrels) for 6-18 months. The wines are frequently batonnaged and bottled without filtering. Currently, the Domaine owns 75 hectares and is the largest in the Northern Rhone region. In 2016, the Domaine opened a new winery and adopted gravity flow, striving to produce even more outstanding wines.
