Yves Cuilleron was skeptical of the fact that most of the varieties grown locally were Syrah, and decided to plant ancient varieties that were suitable for the local area but had been forgotten. The fields are left undergrowthed to prevent soil erosion. No pesticides or herbicides are used. Organic pesticides are sprayed as needed. To aid maturation, the vines are controlled for vigor and yield, and leaves are removed and thinned. In spring, the buds are thinned. Harvested by hand. Wine is vinified in the traditional way, divided into plots. Grapes are sorted, crushed, and partially destemmed in the cellar. Maceration for 3 weeks in open tanks. Natural yeasts are used. MLF is aged for 18 months in wooden barrels. Born in 1961, Cuilleron studied winemaking and viticulture at a technical school before taking over his uncle's domaine in 1986. In his mid-30s, he has already reached the top level as a white wine producer in the Rhone region, and in particular owns a large 12-hectare vineyard in Condrieu, where he produces outstanding wines with complex, rich, well-balanced, and deep flavors. His Vieilles Vignes made from old vines and his Récolte Tartives made from perfectly ripe grapes picked later are spectacular. The vines are 15 to 60 years old, and the grapes are harvested by selecting the most ripe grapes possible, with the minimum amount harvested, and then carefully selected again on the selection table. For reds, up to 30% of the grapes are fermented whole in cement and stainless steel tanks, which are easy to control the temperature. For whites, the wines are basically fermented in barrels. After a long maceration, the wines are aged in small barrels (10 to 100% new barrels) for 6 to 18 months. The wines are frequently batonnaged and bottled without filtering. He currently owns 75 hectares, making him the largest domaine in the Northern Rhone. In 2016, they opened a new winery and adopted gravity flow, continuing to strive to produce even more outstanding wines.
