The three plots are located on the flat land at the foot of the slope, east of the national highway. The average age of the vines is over 50 years. The grapes are harvested after the Chardonnay and are selected when they are ripe. Founded in 1940, this is a long-established domaine in Meursault. The current owner's grandfather, Julien Coche-Dubeau, established the domaine, and his father, Alain Coche-Bizouard, led the domaine to great success. The current owner, Fabien Coche, born in 1973, took over the domaine himself and has held important positions in the Meursault wine producers' association for many years, establishing a solid position in Meursault as an indispensable presence in the region. Coche-Dury and Jean-Marc Roulot are Fabien's cousins, making this a truly prestigious family of Meursault. Currently, Fabien, who knows the Cote de Beaune well, which produces about 12 hectares and 28 appellations, owns about 40 lieu-dits in the Cote de Beaune alone, and cultivates all of them organically. He knows the characteristics of all the lieu-dits, and in the Meursault vineyards, which are closer to Volnay, he deliberately planted Pinot Noir after understanding the characteristics of the land, and he values the quality of the finished wine more than business. Originally, the amount of SO2 added was very small, but since around 2019, as a new attempt, carbon dioxide has been injected to further reduce the amount added. Therefore, you may feel popping bubbles immediately after opening the bottle. The popping of the bubbles allows you to feel the flavor of the fruit more. In order to bring out the original flavor of the fruit, the wine is not clarified or filtered at the time of bottling. Fabien Coche, who has a deep understanding of the climats of the Cote de Beaune, is one of the vignerons who can most faithfully express the quality and individuality of the wines of this region.
