A blend of Domaine Eden's cuvée and Mount Eden's cuvée, which has a fruity flavor and can be enjoyed when young. Fermented using natural yeast in French barrels and aged for 10 months. Enjoy the aromas and flavors of citrus, anise, dill, and leaf mold.
The grapes in their own vineyards at high altitudes are not irrigated or fertilized, which puts them under a lot of stress, resulting in low yields and grapes with a strong sense of concentration.
Domaine Eden's Chardonnay is a blend of Domaine Eden cuvées and Mount Eden cuvées, which have a fruity flavor and can be enjoyed at a young age.
Technical information
Harvest: August 21st to 26th.
All of the vineyards are located at high altitudes and in dry farmland, so the grapes are picked early to preserve the natural acidity.
Brewing and ageing: Fermented in French barrels and aged on the lees for 10 months.
(2nd to 5th year barrels) 100% malolactic fermentation.
Vintage Information
2020 was a very dry vintage. Domaine Eden does not irrigate, so they pay close attention to the amount of rain. The yield was small, but the grapes were concentrated and healthy.
Tasting Comments
Classic rich aromas of citrus, honeysuckle and hazelnut. Concentrated acidity and crisp taste of lemon, cardamom and minerals. Enjoyable now, but has the potential to age for 10 years.
