Monkey Jacket began with the idea of ​​creating a casual blend wine, mainly Valdiguier. In 2020, 65% of the total is Valdiguier. Valdiguier is a grape with fruity aromas and firm acidity. The Petite Sirah and other red grape blends and Carignan (all vines over 50 years old) are added to complete the wine. Approximately 35% of the total was fermented as whole bunches. All grapes were fermented in concrete, and after pressing, they were aged in old French oak barrels and concrete tanks, so as not to impair the transparency of the fruit. MLF occurs naturally, and a very small amount of sulfite was added just before bottling. The Cruse Wine Co. brand produces wines with the pure fruitiness and transparency that are unique to California, as well as a strong structure, and the Ultramarine brand produces fragrant, handmade sparkling wines from a single vineyard and a single vintage, inspired by Champagne's Recoltant Manipulant.
