DINING
Enjoy it with grilled fish or chicken dishes. It also goes well with tempura and fried seafood.
TASTING
Floral and fruity, with a scent reminiscent of white fruits. You can also feel a slight hint of iodine and smoke. The lively acidity gives balance to the whole wine.
COMMENT
Like Marcel Lapierre and Pierre Auvernoy, Texier has been producing terroir-focused "natural wines" since the 1990s.
We produce wine mainly from the very small AOC "Côtes du Rhône Brezem", which is about 23 hectares in size.
This wine is made from Clairette and Bourboulenc grapes grown in the very limestone "Bois Sénéchaux" plot, which Texier considers to be the best for white wine. Unusually for Chateauneuf-du-Pape, malolactic fermentation is carried out, but the good acidity of the Bourboulenc remains, giving the wine balance.
WINEMAKING
Slowly pressed for 24 hours, then fermented in wooden barrels (used barrels) and aged for 16 to 20 months.
