The soil is made from iron-rich bedrock and well-drained sedimentary clay soil on the western foothills of St. Helena. A small plot of 0.4ha. Fermented and aged for about 9 months in concrete eggs, French barrels (new barrels, used for several years), and small stainless steel barrels. Aromas of nectarine, lychee, honeysuckle, and a stony minerality are prominent. The mouthfeel is smooth and supple, with a pleasant balanced acidity, rich and thick, and you can enjoy the nuances of lemon cream, spearmint, dry stone, and citrus peel along with a long aftertaste.

Technical information

Sauvignon Blanc is grown on a tiny plot of just 0.4 hectares.

Winemaker Morgan Morese inspects each plot before harvest and determines when to harvest based on visual, taste and scientific analysis.

Although the plots are small, the maturity of each clone is carefully checked and the grapes are harvested in small lots.

Brewing: The whole bunches are gently pressed, taking care to avoid any bitterness, and the wine is fermented and aged for 9 months in concrete eggs, French barrels (new barrels, used for several years), and small stainless steel barrels.

The individuality of each plot and clone is brought out and then blended.

Tasting Comments

Beautiful pale golden colour and full of juicy fruit.

The aroma also features tropical nuances of white peach, clementine orange, jasmine tea, honeycomb honey, pineapple and guava.

The mouthfeel is smooth and supple, with a pleasantly balanced acidity. It is rich and thick, reminiscent of white peach and lemon cream, and the long aftertaste also features a minerality like dry stone.

It can be enjoyed now if served slightly chilled at around 10°C, but if it is stored in the cellar for 5 to 10 years it will develop even more depth.
