Ceniza (Spanish for ash) is located in the southeast of the valley, at the foot of the Vaca Mountains, and is a river deposit soil containing volcanic ash. It benefits from cool morning fog and afternoon breezes. Aged 20 months in French barrels (75% new barrels). The mountain herbs and wildflowers are impressive. The best lot is selected after approximately 10 months of aging in French barrels, and then aged for a further 10 months in barrels (approximately 20 months in total, 75% new barrels), and then aged in bottles for approximately 6 months before being released.
