COMMENT
This winery is a descendant of the prestigious Pillon family, which represents Chassagne-Montrachet. They also own prestigious vineyards in Puligny and Meursault. Currently, under the young fifth-generation owner Antonin, they are beautifully expressing the complexity of the terroir in the southern Côte de Beaune.
This wine is made from grapes from a special plot surrounded by a clo (stone wall). Formerly owned by an old Benedictine nunnery. The topsoil is shallow, making it suitable for red wine, and 100-year-old Pinot Noir vines are planted here. You can enjoy the concentrated flavor brought by the old vines.
WINEMAKING
Only 50% of the stems are removed. Fermented in stainless steel tanks using natural yeast. Aged for 12 months in wooden barrels (30% new barrels) and then 6 months in stainless steel tanks.
