Ontogeny has named the process of finishing and aging the wine, which is biologically called "ontogeny," as "multi-vineyard wine." Cabernet Sauvignon is the main ingredient, with the rest being Merlot and Cabernet Franc. Blended after single vineyard selection. The 2019 VTG is mainly from Tench Vineyard. Aged in new French barrels, and repeatedly tasted to determine the aging period, racking, and bottling timing. A rich taste with pure fruitiness at the forefront. The attractive umami and well-rounded tannins are pleasant.

Winemaking and aging: The destemmed grapes are carefully selected one by one, and all unripe and overripe grapes are separated out.
Aged in new French barrels (Remond, Francois Freres, Darnajou, Taransaud).
Tastings are conducted on average once every two weeks to determine the timing of aging, racking, and bottling.

The 2019 vintage is characterised by very powerful and intense fruit flavours.
The proportion of Cabernet Sauvignon has increased since 2018, and the wine is mainly made from rocky blocks from Tench Vineyard.
The addition of Merlot and Cabernet Franc creates a perfect balance.
It has a rich, elegant and attractive flavour with hints of creme de cassis and raspberry.
The mouthfeel is smooth and oily, with pure fruit flavors spreading throughout the mouth, and it is full-bodied and rich, yet well-balanced.
Field Information
A multi-vineyard blend of Porto varieties produced by Bevan Cellars from a single vineyard. The 2019 vintage is dominated by Cabernet Sauvignon from Tench Vineyard (Oakville), which brings out the rich fruitiness, while Cabernet Franc and Merlot from other vineyards bring out the nuances of cigars and dark chocolate.
The cuvée for this wine is first selected from the single vineyards at Bevan.
