Heidi's father, Richard Peterson, has released a sparkling wine from Amuse-Bouche, co-owned by Heidi Barrett. The aim is to produce the finest sparkling wine in Napa Valley. The wine is made using grapes from their own 0.8 hectare vineyard, located in the cooler region of Napa, south of Yountville. (Wrotham Clone) Robb Report (August 2013) said that the wine is reminiscent of Dom Pérignon's 2002 Rosé and Krug's 1995 Clos d'Ambonnay. Aromas of toasted brioche and exotic spices. Bright red fruit flavors reminiscent of crushed strawberries with creaminess and fresh acidity.
Heidi Barrett's Amuse-Bouche is a masterpiece that combines wine and art and is the kind of wine collectors would want to keep in their cellars.
The company, with the aim of "producing the most valuable sparkling wine in Napa Valley," released the 2004 vintage Richard G. Peterson Brut Rosé in 2013.
Made using the secondary fermentation method in the bottle, it is aged for 6-7 years depending on the vintage.
The winemaker is Heidi's father, Richard G. Peterson.
This wine is made from 100% Pinot Noir from Peterson's own vineyard in Yountville, England. All of the vines are clones of a single vine native to the village of Wrotham in Kent, England, which is said to date back to the finest Pinot Noir produced by the ancient Romans.
About Richard Peterson
Richard Peterson earned his PhD in Chemistry from Iowa State, Food Science from UC Berkeley, and Agricultural Science from UC University.
He created innovative products such as Seagram's first wine cooler and Gallo's Hearty Burgundy, and together with Andre Tchelistcheff, he contributed greatly to the success of wineries such as Beaulieu Vineyards, Monterey Vineyards, and Atlas Peak Vineyards.
Richard Peterson was not afraid to try new things, and the techniques he invented and experiments he proved are still in use today.
For example, a bang and roll is a technique for rotating the barrel so that there is no need for weirage.
