DINING

This white wine goes well with marinated fresh fish, steamed scallops, shrimp, and shellfish dishes, bamboo shoots, roasted chicken, white meat with herb dressing, yakitori, tempura, Chinese cuisine, etc.

TASTING

The wine has a cheerful impression with a good balance of acidity and sweetness of the juice. Anderson Valley grapes are surprisingly mineral, and you can feel lemongrass, citrus fruits, and a touch of minerality.

COMMENT

Wind Chaser is a family-run urban winery founded in 2015 in the warehouse district of Berkeley, California. Grapes are sourced primarily in El Dorado and Mendocino, California. The winemaker keeps intervention to a minimum, making use of natural yeast, and producing small quantities of wines using brewing methods that bring out the potential of each grape, such as barrel fermentation and whole-cluster fermentation. The use of SO2 is also kept to a minimum. A variety of wines are being released, from classic, clean-tasting to funkalicious (a portmanteau of funky and delicious).

The winery's name "Wind Chaser" comes from the fact that Dave, a surfing enthusiast, has traveled around the world for many years in pursuit of the wind.

WINEMAKING

Pinot Gris from Foothills Vineyards, planted in 2002. Hand-picked on August 27th. Directly pressed whole clusters. No skin contact. Fermented in wooden barrels with natural yeasts, then aged for 10 months in stainless steel tanks (30%) and neutral French oak. Bottled unfined and unfiltered. 30ppm S02 added at bottling. Only 100 cases produced.
