COMMENT
This winery is a descendant of the prestigious Pillon family, which represents Chassagne-Montrachet. They also own prestigious vineyards in Puligny and Meursault. Currently, under the young fifth-generation owner Antonin, they are beautifully expressing the complexity of the terroir in the southern Côte de Beaune.
This wine is made primarily from Chardonnay grapes from the villages of Chassagne-Montrachet and Puligny-Montrachet, where Jean-Marc Pillot is based.
WINEMAKING
Pressed with whole bunches. Fermented in wooden barrels (no new barrels). Aged in wooden barrels for 12 months, then in stainless steel tanks for 3 months.
