COMMENT
This is a long-established maison in Sancerre, a famous wine-producing region in the Loire region, which has been in business since 1850. The maison owns many vineyards with "silex" soil, where the best wines in Sancerre are made, and produces wines that can be aged for a long time, with an emphasis on terroir. The owner, Henri Bourgeois, is a great Japanophile and has visited Japan more than 60 times.
This cuvée is made from grapes grown on sunny hillside plots containing silex and limestone, and bottle ageing adds mellowness and depth to the flavours.
WINEMAKING
The wines are hand-picked, then débourbage and fermented. No malolactic fermentation is performed. The wines are aged on the lees for 9 months. The first 4 months are batonnage regularly.
