At each vineyard, the grapes are picked at night or early in the morning and transported to the winery.
There, they undergo a three-day cold soak, during which the colour, aroma and flavour compounds stored in the grape skins are slowly extracted and incorporated into the wine.
After the cold soak, the juice is infused with selected yeasts to maximize the varietal characteristics and ensure a robust fermentation.
Because Merlot is a somewhat delicate grape, fermentation is short and fairly hot, with minimal handling to avoid oxidizing the wine.
Towards the end of fermentation the juice is removed from the skins and aged in French oak.
