Winemaking: Fermented in stainless steel tanks using only wild yeasts, followed by malolactic fermentation. Aged for 24 months in stainless steel tanks and 5-10 year old barrels.

A beautiful, shiny ruby. In addition to the wild fruit aromas of raspberry and raspberry, it also has spices such as white pepper and a clear, charcoal-like mineral aroma. The smooth, fine tannins spread throughout the mouth, and the small berry-like fruitiness and moist minerality spread gently throughout the mouth. This producer is located in the village of Prey in the southern part of Chablis. After graduating from the brewing school in Beaune, Clotilde Davenne worked in brewing at Jean-Marc Brocard, a pioneer of biodynamic cultivation in Chablis, for 16 years from 1989. During that time, she bought vineyards little by little, and became independent in 2005. She respects the terroir and cultivates organically in her own vineyards. She is currently applying for certification. Her skills were highly praised when she was with Jean-Marc Brocard, and even after she became independent, she has received high praise in numerous wine guides, and is now known as one of Chablis's leading female brewers, along with Nathalie Faivre, who was the head brewer at La Chablisienne.
