パソロブレスが生み出した至極のボルドースタイルのCS
南カリフォルニアの北限、時間がゆっくり流れるのどかなワイン産地、パソロブレス。その代表格がナパやソノマなどのワイナリーを差し置いて、堂々『American Winery of the Year』にも選出されたジャスティン・ヴィンヤード。
こちらが伝統的なボルドーワインと同様の手をかけて造られた、ボルドースタイルのカベルネ・ソーヴィニョン。手摘みで収穫し、一粒単位で選果。畑の石灰岩とブドウ品種が持つ個性を表現するため、13か月、25%新樽のアメリカンオークで熟成。
中心部が薄いルビー色の淡い色合い。アロマティックな熟したブラックチェリー、カシス、タバコの葉、枯れた紅葉、オーク、レザー、ほのかな紫花の香り。
フルボディな口当たりは、熟したブラックチェリーと、カシスと赤果実がバニラ、シナモン。そして、オークのアクセントが効いた黒果実と赤果実、枯れた紅葉のミッドパレット。柔らかいタンニンで余韻を感じる。
とても万能なカベルネ・ソーヴィニョンなので幅広い食事に合わせることができる「Go-to-Red」（迷ったときはコレ！な赤/間違いない赤）
